French cheese "Vieux Pané"
French cheese born at the end of the 70s, the Vieux Pané can evoke, by its aspect, the "Pont Levêque". Why ? he was born in a workshop that made it. Thus, like him, it is cow's milk, of square format and tender texture. At its origin, like him, its crust was the subject of regular brushing with salt water. Then a panelure was applied to dry its crust, which gave it its name, then abandoned. It is now rubbed and brushed by hand in the cellar, bringing out its beautiful brick color.
