The Summer truffle also known as "Truffes de la Saint Jean" is harvested from mid April to the beginning of August in the same area as it's cousin the black winter truffle.

The Summer trufflewill be tasted very simply: grated fresh on a salad, dotted with olive oil and fleur de sel. There are 15 to 20g per person to enjoy and 7 to 10 just to taste. Match perfectly with a white Côte du Rhone or rosé de Provence.
